The cacao bean, also known as the cocoa bean, is the dried, fermented seed of the Theobroma cacao (the cacao tree). This raw chocolate is one of the richest sources antioxidants found in nature, and it contains an abundance of magnesium and iron. Cocoa powder, on the other hand, is roasted at high temperatures, which changes the molecular structure, reducing the enzyme content and lowering the overall nutritional value.  It’s important to note that cacao contains caffeine as well as a substance called theobromine, both of which are stimulants, so while a great substitute for that morning coffee, you may want to refrain from enjoying before bed.
