Hello! I’m Zakiya, a registered nurse and food/health blogger living in beautiful Vancouver, B.C. I’m extremely passionate about nutrition, wellness, and health promotion, which is why I started my blog, “Zakiya’s Kitchen” in 2017!

I’m so excited to be a part of the Yoso community because I truly love and believe in their products! I have been dairy free for several years now, and until I came across Yoso, it was so hard to find healthy alternatives for things like yogurt and cream cheese that tasted good, and weren’t filled with unnecessary additives. I also love that Yoso is a Canadian company, and that its core values revolve around health, community, and environmental support.

As much as I’m a creature of habit when it comes to breakfast (oatmeal is very near and dear to my heart), I love eating seasonally!  This roasted delicata breakfast squash is great for fall or winter – it provides the perfect blend of flavours and textures to start your morning off on a delicious and warming note.

Roasted Delicata Breakfast Squash

Prep time: 5 minutes

Baking time: 25-30 mins

Ingredients: 1 delicata squash, 1/2 cup unsweetened Yoso coconut yogurt, 1 tsp coconut oil, 1/4 tsp Himalayan salt, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1 tbsp chia seeds, 1-2 tbsp nut butter of choice, and 1/2 cup fruit (i.e. cranberries, raspberries, strawberries)

Instructions: Preheat oven to 400 F.  Slice squash in half (lengthwise), and scoop out the seeds. Rub outside of squash with coconut oil, and sprinkle insides with salt, cinnamon and nutmeg.  Bake at 400 F for 25-30 mins, until tender when pierced with a fork. Fill the inside of each squash half with Yoso unsweetened coconut yogurt, sprinkle with chia seeds, and top with nut butter and fruit of choice!

This post is part of our series, How do you Enjoy Yoso? We asked friends in our healthy community to share one of their favourite ways to enjoy our dairy-free products.
