Ingredients:

  • 2 cups old-fashioned rolled oats
  • 1 1/4 cup sliced almonds
  • 1/4 cup honey
  • 1/4 cup canola oil
  • 1 cup fresh or frozen blueberries, raspberries or hulled, sliced strawberries
  • 1 tablespoon lemon juice
  • 2-4 tablespoon honey
  • 1 3/4 cup fresh blueberries, raspberries or hulled, sliced strawberries
  • 1 3/4 cup Yoso Soy Vanilla, Blueberry or Strawberry Yogurt

Method:

  • Granola:
  • Heat oven to 375°.
  • Line baking sheet with foil; spray with cooking spray.
  • Combine oats and almonds.
  • Combine honey and oil and pour over oat mixture; stir to coat.
  • Spread granola mixture onto baking sheet and bake, stirring every 5 minutes, until golden, about 12-15 minutes.
  • Remove from oven and cool completely (granola will crisp up while cooling).

Berry Sauce:

  • Purée berries with lemon juice.
  • Gradually add honey to desired sweetness.
  • Strain through fine sieve.

Parfaits:

  • Layer granola, yogurt and fruit in parfait glasses.
  • Repeat.
  • Finish with sprinkle of granola and drizzle of sauce.
  • Garnish with mint.
  • Serve immediately.
