Ingredients:
- 2 cups old-fashioned rolled oats
- 1 1/4 cup sliced almonds
- 1/4 cup honey
- 1/4 cup canola oil
- 1 cup fresh or frozen blueberries, raspberries or hulled, sliced strawberries
- 1 tablespoon lemon juice
- 2-4 tablespoon honey
- 1 3/4 cup fresh blueberries, raspberries or hulled, sliced strawberries
- 1 3/4 cup Yoso Soy Vanilla, Blueberry or Strawberry Yogurt
Method:
- Granola:
- Heat oven to 375°.
- Line baking sheet with foil; spray with cooking spray.
- Combine oats and almonds.
- Combine honey and oil and pour over oat mixture; stir to coat.
- Spread granola mixture onto baking sheet and bake, stirring every 5 minutes, until golden, about 12-15 minutes.
- Remove from oven and cool completely (granola will crisp up while cooling).
Berry Sauce:
- Purée berries with lemon juice.
- Gradually add honey to desired sweetness.
- Strain through fine sieve.
Parfaits:
- Layer granola, yogurt and fruit in parfait glasses.
- Repeat.
- Finish with sprinkle of granola and drizzle of sauce.
- Garnish with mint.
- Serve immediately.
