Happy Belly Parfait

This recipe uses Yoso’s cultured coconut yogurt because it’s filled with gut-loving probiotics and is easy to digest. Plus, thanks to a great balance of carbohydrates, healthy fats and plant protein, it makes a great breakfast to fuel your busy morning.

Prep time: <10 minutes


1/2 cup Yoso plain, unsweetened coconut yogurt
1/2 cup fresh strawberries, sliced
1 tablespoon unsweetened shredded coconut

Raw trail mix:
2 tablespoons raw cashews
2 tablespoons raw almonds (soaked overnight, if possible)
2 tablespoons raw walnut pieces
1 tablespoon cacao nibs
1 tablespoon goji berries
1 tablespoon raisins or dried cranberries
1 tablespoon dark chocolate pieces (optional)


1. Create trail mix by combining cashews, almonds, walnuts, cacao nibs, goji berries, raisins and chocolate pieces in a small bowl.
2. Spoon yogurt into your serving dish. I recommend using a large stemless wine glass for beautiful presentation at home, or a small mason jar if you plan to tote your breakfast.
3. Layer strawberries over the yogurt. Remember: you eat first with your eyes, and we need to look at appetizing food in order to digest optimally so take your time and make it look nice.
4. Top with raw trail mix, and shredded coconut. Enjoy!
