Q: Why does YOSO soy yogurt contain the following ingredients?
A:
Dextrose: Dextrose is basically a simple sugar found in our bloodstream and serves as the body's main source of energy for the support of our daily activities. Also known as grape sugar, dextrose is only around ¾ of the sweetness of white table sugar (sucrose). We use dextrose to enhance the fruit note in our strawberry and blueberry soy yogurts. We also use dextrose to bring up the natural vanilla flavor in our vanilla soy yogurt to minimize a heavy sweet aftertaste.
Fructose: Naturally found in honey, fructose is about 1.7 times sweeter than table sugar (sucrose). In addition, fructose and sucrose share the same "food energy value" at the level of 4 kilo calories per gram of sucrose or fructose. To minimize the kcaloric value for each serving of YOSO soy yogurts, we select fructose as a predominant sweetener of our soy yogurts simply because we can sweeten our yogurts at a usage level lower compared to other sweeteners (sucrose).
Organic Evaporated Cane Juice: Unlike the highly processed refined white table sugar, organic evaporated cane juice is simply a dried form of organically grown sugar cane retained with its very own minerals and molasses contributing to its unique taste. We use organic evaporated cane juice to enhance the vanilla note in our vanilla soy yogurt.
Yeast Extract: Rich in B vitamins and a water-soluble fraction of food grade yeast, yeast extract has been commonly used in commercial food manufacturing for centuries from baking to wine making. We use yeast extract to promote the optimal growth and activities of the live bacterial culture in our soy yogurts. Yeast extract is essential for proper flavor and textural developments in our soy yogurt curd during the natural fermentation process."
