My name is Lisa Manzo and I am a Registered Holistic Nutritionist (R.H.N), Personal Trainer (PTS), Author of the book Healthy is Sexy, Wellness Blogger and the Founder of PurEnergy Wellness Lofts in Toronto. Apart from my business titles, I am a wife and a new mom. All of these titles are wonderful, but serve a specific purpose: they give me the ability to fulfill a dream. Creamy Avocado Yogurt Dip with Rosemary Beet chips
Yield: Serves 4
Prep Time: 10 minutes
2 ripe avocados
½ cup Yoso coconut yogurt
1 garlic clove minced
2 Tbsp Olive Oil
5 beets (if organic do not peel for extra vitamins & minerals!)
1 sprig of rosemary
Salt & ground black pepper to taste
- Place Avocado, yogurt, garlic and olive oil in a blender or food processor until smooth. Season with salt and pepper to taste.
- Cut beets into thin slices, lightly drizzle with olive oil, add salt, pepper and rosemary. Place beets (1 inch apart) on a baking sheet lined with parchment paper.
- Place in oven on 250 for 30 minutes. Be sure to watch the beets so they do not burn
