My name is Lisa Manzo and I am a Registered Holistic Nutritionist (R.H.N), Personal Trainer (PTS), Author of the book Healthy is Sexy, Wellness Blogger and the Founder of PurEnergy Wellness Lofts in Toronto.  Apart from my business titles, I am a wife and a new mom.  All of these titles are wonderful, but serve a specific purpose: they give me the ability to fulfill a dream.  My mission statement – if you will – is to bring each and every person I encounter a positive and lasting experience.  I’m motivated and passionate about everything I do; helping others to live a healthy and happy life is my life mission.

Creamy Avocado Yogurt Dip with Rosemary Beet chips

Yield:  Serves 4

Prep Time: 10 minutes

Ingredients:

2 ripe avocados

½ cup Yoso coconut yogurt  

1 garlic clove minced

2 Tbsp Olive Oil

5 beets (if organic do not peel for extra vitamins & minerals!)

1 sprig of rosemary

Salt & ground black pepper to taste

Instructions:

  1. Place Avocado, yogurt, garlic and olive oil in a blender or food processor until smooth.  Season with salt and pepper to taste.
  2. Cut beets into thin slices, lightly drizzle with olive oil, add salt, pepper and rosemary.  Place beets (1 inch apart) on a baking sheet lined with parchment paper.  
  3. Place in oven on 250 for 30 minutes.  Be sure to watch the beets so they do not burn

I am an avocado fanatic! Whether it is on my face as a beauty face mask or incorporating it in my dishes! This dip is so easy and makes a great party appetizer or healthy snack!
