Creamy Avocado Yogurt Dip with Rosemary Beet chips

Yield: Β Serves 4

Prep Time: 10 minutes


2 ripe avocados

Β½ cup Yoso coconut yogurt Β 

1 garlic clove minced

2 Tbsp Olive Oil

5 beets (if organic do not peel for extra vitamins & minerals!)

1 sprig of rosemary

Salt & ground black pepper to taste


  1. Place Avocado, yogurt, garlic and olive oil in a blender or food processor until smooth. Β Season with salt and pepper to taste.
  2. Cut beets into thin slices, lightly drizzle with olive oil, add salt, pepper and rosemary. Β Place beets (1 inch apart) on a baking sheet lined with parchment paper. Β 
  3. Place in oven on 250 for 30 minutes. Β Be sure to watch the beets so they do not burn
