I love how we can incorporate healthy ingredients and create a delicious finished product that even the pickiest of eaters would enjoy!

Dairy-Free Nice Cream Sandwiches

Cookies:
3 Tbl of molasses
1/4 cup of Earth Balance butter
1/4 cup of cashew or almond butter
1 flax egg
1/4 tsp of cinammon
3/4 tsp of ginger powder
1/4 tsp of nutmeg & salt
1/2 tsp of baking soda
1 1/4 cups of gluten-free pie crust Bob’s Redmill or any flour
1/2 cup of coconut sugar
create the size of cookie you desire and bake at 350 for 8 minutes. Let it cool and harden for 10 mins before transferring to a cooling rack

Nice cream:
3 frozen bananas
1 Tbl of protein powder
1/4 cup of Yoso coconut yogurt
stir in frozen cherry halves

Let it harden for a half hour in the freezer and then scoop onto a cookie half and then place the other half on top. Place in freezer until ready to serve or eat immediately.
